I know exactly what u r talking about as do a lot of other board members i'm sure -
I prefer soundforge myself with the waves restoration plugins, i would advise caution with too much noise removal etc, i have found if i listen back to tracks i mastered when i first got all audio'd up they have a nasty edge to them - too many frequencies have been messed with. After a good 5 years of endless tweaking i have now got a good little setup/routine for re mastering old material from vinyl and have also realised that if a recording has inherent analogue hiss etc then that is best left pretty much alone. I will only remove the frequncies that i have added from my outboard equipment at the recording stage - amp/mixer/stylus etc
