I always assumed to show off the newfangled stereo recording technology, but possibly just to copy the success of Ferrante & Teicher as well?

nowhere on those album covers does it say 'ronnie aldrich PLAYS two pianos'. it only says he's GOT two pianos. maybe one was in the shed as a spare or something.http://www.blaxploitation.com

I remember posing this question way back on my first chart ever (it's not archived anymore). I have two theories:
1) He does spectacular juggles live.
2) He only has one piano and they just pan it from left to right occasionally.
...also, there's a pretender out there with a really strange name that starts with Z who has either four or eight or sixteen pianos, I don't remember exactly. (I only know of this guy by seeing a small ad for it on the back of another LP that I didn't buy... pretty sure I didn't dream it though).
More pianos = more party, as we all know.
