OK, so I just picked up a copy of "Lennon and McCartney Styled By Alan Haven", and I started thinking about how many thousands of other Beatles covers albums there must be out there.
I'm starting to list a few here, and hope we can collectively nail some more.

Cathy Berberian - Beatles Arias. One of the most unlikely, Beatles songs done in an operatic style. This is gruelling and hilarious at the same time.

Joshua Rifkin - The Baroque Beatles Book. 1965 effort, wrapping up Beatles melodies with whimsical classical parody. There's a also couple of EPs by other artists ploughing similar territory (Eine Kleine Beatlemusick, Beatlecracker Suite).

There are at least two Tijuana styled Beatles albums: The Sound Of Brass - Lennon and McCartney Tijuana Style and Los Norte Americanos - Tijuana Beatles. The first is an MFP charity shop staple, and has some pretty upbeat and fun moments. The second has an elevator TJ version of "The Ballad Of John And Yoko" which is recommendation enough, surely?

And here's Alan, on Lowrey Organ with drums, getting mildly jazzy.
